Mocha Mousse Recipe

Ingredients:

 

*      1 Large Egg, separated

*      1 Large Egg White

*      1 Tin (380g) Low fat Evaporated Milk

*      15ml (1T) Cocoa

*      10ml (2t) Coffee Granules

*      15ml (1T) Gelatine

*      50ml Water

*      60ml (41g) Sugalite

 

1.    Beat egg yolk, combine in a saucepan with evaporated milk, cocoa, and coffee, mix until smooth.

2.    Warm mixture over a moderate heat, do not bring to the boil. Remove from the heat and cool.

3.    Sprinkle gelatine over the water and allow to set. Heat in the microwave for a few seconds or over hot water.

4.    Stir into the chocolate mixture.

5.    Cool the mixture in the fridge until it begins to set around the edges and is the consistency of thick egg white.

6.    Beat the egg whites until stiff and slowly add the Sugalite.

7.    Fold into the chocolate mixture. Pour into the serving dish or individual glasses, cover and refrigerate overnight or for 3 hours.
